As long as the boar is healthy ie does not have heart problems or the like then there is no upper age limit. It is health that is the priority not age. A 1 year old boar with a respiratory or heart problem should not be castrated, though depending on the respiratory problem it should clear up.
When you consider that a 5 year old boar may go on to live for another 3 or 4 years that's a long time to be on your own or just living nextdoor to others when you could be enjoying the company of sows.
A healthy 5 yearold can be castrated and we have had 5 year olds castrated here with no problem, and then gone on to find them new homes with sows. Without the op they would have either spent a life on their own (technically breaking the law) or here in rescue.
I may have had older boars castrated because we don't know the age of most of the ones that come in.
